Creamy Thai Beet Soup. Culinary Medicine for the Liver

I was looking through recipes to find something different to make with beets. Nothing will flush out toxins from the liver better than beets.

The only issue here was I didn't have all of the ingredients. I was missing red curry paste, and lemon grass. So I figured I'd make a version of my own. Finding substitutions for foods are my gig anyway, and it makes it more like an adventure. What goes into curry paste? I did a little homework and found out that something like lime juice goes a long way. Garlic, ginger lemongrass, the recipes can vary, most have red pepper but I shy away from nightshades.

But I digress. everything in the ingredients you'll need is here.

I LOVE LOVE LOVE Frontier Coop curry powder. I used it when I was a production chef. Best, freshest spices ever.

I'm going to give approximate measurements for two reasons.

Number 1. I didn't measure.

Number 2. I want you to discover for yourself. What do your taste buds say? I think we get hung up on exact measurements. You can't get it wrong, taste as you go. Just don't put your fingers in the blender when its on. Ready?

Now remember, measurements are just guidelines. If you like more ginger like I do? Add more. Lets call this intuitive cooking. Let's press the easy button.

Ingredients

  • 1 large beet roasted whole in foil at 400 degrees or boil and peel when cooled.

  • 1 1/2 cups veggie broth.

  • 1 cup full fat coconut milk

  • 1 bunch scallions
    Chop and save half for garnish

  • 1 clove garlic

  • about 2 inches of grated peeled fresh ginger

  • 2 teaspoons good quality curry powder but start with 1 teaspoon first and add if desired. If you want to use red curry paste, instead, knock yourself out.

  • Juice of 1 lime and a little extra to taste.

  • Lemon grass paste or 1 inch ( if you have it )

Directions

  • Roast the beet in foil at 400 degrees, remove when you can put a knife through it . Open and cool before peeling. Peel and chop into about 2 inch pieces
  • In a blender add the beets, half the scallions, broth, coconut milk, garlic, ginger, curry powder, lemongrass paste and lime juice. If you have lemongrass add it. Blend well.
  • At this point taste for flavors, and adjust. Garnish with lime and green onion.
