There is no reason in the world to deny ourselves some simple pleasures.
There is an art to food substitutions. It's knowing what ingredients to substitute for others. The occasional treat, well maybe not so occasional, but necessary to our well being, chocolate is in its own food group. I'm not judging.
I ate this for breakfast.
I justify this by adding double the amount of protein. I'm going to write this recipe with both nut free and nut options. so this can be VEGAN and GLUTEN FREE.. If you can eat nuts by all means use that instead. Just swap them out.
Here are your substitutions:
SUN NUT BUTTER instead of almond or peanut butter
Maple syrup OR local raw honey
Allergen free Chocolate. ENJOY LIFE makes a Great chocolate and its in a dedicated facility.
You will need a 12 cup cupcake pan, parchment or wax paper. cup liners.
2 Cups Allergen Free Chocolate Chips
1 Heaping Tablespoon coconut oil
1 cup almond butter
2 Tablespoons Coconut flour
2 Tablespoons maple syrup OR 1 Tablespoon local honey I prefer the syrup
Salted pumpkin seeds for garnish or Chia seeds. Remember this is CUSTOM to your dietary protocol
Line a 12 cupcake pan with paper liners.
In a double boiler melt chocolate and coconut oil. Shut off and allow to cool.
In a bowl, add the SUN NUT butter, Maple syrup and coconut flour. Blend well and put in the freezer for about 10 minutes, remove and make 12 equal size balls and fashion into a disk out on a plate covered with wax or parchment paper.
In a lined cupcake pan add 2 teaspoons of chocolate. Do all of them first. Then add the SUN NUT butter disks.
Cover with a further 2 teaspoons of melted chocolate. Garnish with pumpkin seeds chia seeds, salt flakes if you like or even coconut flakes.
